“To control the acidity of your starter is one of the most important things if you are on the quest for open crumb. Given the right conditions, bacteria can easily outgrow the yeast and inhibit their production of CO2.
Too much built-up acidity will weaken the starter and affect its growth. You’d be transferring that built-up acidity to your dough, and that would tighten your crumb: your crumb won’t bloom. A balance between LAB and yeast must be created for a strong and vigorous starter.”
